A sentence that gets repeated in my house somewhere around 9.00 am is “Eat your breakfast, take one more bite, finish your meal”. Of course my 2-year-old will care less for the food served to her for breakfast - she is busy displaying her trademark pickiness. Toddlers are notorious for being fussy and refusing to eat pretty much everything their Mums serve. Mine is not only choosy but quite particular about the taste too. So, for me juggling with her breakfast is a task in itself. While these are phases that pass, it’s important to ensure that she doesn’t lose out on nutrition and get used to the habit of eating a good breakfast every day.     #1. Eggless Whole Wheat Apple Pancakes

    Recipe Ingredients:

    • Wheat flour – 100 gms
    • Apple – 1 (medium sized )
    • Oil – 1 teaspoon
    • Cinnamon powder – ¼ tsp
    • Ghee/Butter – ½ teaspoon
    • Jaggery or Sugar – 1 tsp (optional)
    • Salt – a pinch
    • Baking powder – ½ teaspoon (optional)
    • Water – 50 ml (can substitute with milk if you like)

    Method of Preparation:

    • Sift wheat flour, baking powder, ground cinnamon and salt in a bowl.
    • Add oil and water and mix, ensuring no lumps.
    • Peel and core the apple. Grate it with a fine grater.
    • Add the grated apple to the flour mixture. Set aside for 10 minutes.
    • After 10 minutes, give the pancake batter one more mix.
    • Heat a griddle or dosa tava on medium flame. When hot enough, grease it with ghee or butter.
    • Pour a ladle of the batter onto the pan. Don't swirl it around as for a dosa.
    • You can make small shapes like circles or triangles so that it will be easy for the baby to hold and eat.
    • Cover the pancakes with a lid and cook for 1 minute on a low flame. This helps the grated apple to cook well and blend with the batter.
    • When bubbles appear on the surface of the pancake, flip it over and cook the other side for a minute.
    • Cool and serve with honey or dates syrup. (Avoid for babies under one year)


    #2. Honey Oats Multigrain Porridge

    Recipe Ingredients:

    • ¾ cup milk
    • 2 tbsp powdered oats (I used Quaker oats and ground it to a powder)
    • 1 tbsp Multigrain Health Drink Powder
    • 1 tsp honey (or to taste)

    Method of Preparation:

    • Heat the milk in a pan and once it begins to boil, add the multigrain powder and whisk well as it cooks. The mixture will thicken in 2 minutes.
    • Add the powdered oats and whisk well. Cook the mixture for 2-3 minutes. If the mixture looks too thick, add 2-3 tbsp milk to correct the consistency.
    • Add the honey and stir well.
    • Let the mixture cool just a little. It should still be warm when serving

    #3. Sweet Potato Poha Recipe

    Ingredients

    • Poha/ Aval/ Flattened Rice/Beaten Rice - 1 cup
    • Sweet potato - 1 medium sized (cubes comes to ¾ cup)
    • Onions - 1 small
    • Green chilies - 1
    • Turmeric powder - a pinch
    • Sugar - 1 tsp (optional)
    • Lemon Juice - 2 tsp
    • Coriander leaves - to garnish
    • Water - as needed
    • Salt - as required

    To Temper:

    • Oil - 1 tsp
    • Cumin seeds - ¼ tsp
    • Hing/ Asafoetida - ⅛ tsp

    Method of Preparation:

    • Wash sweet potatoes and cut them into small cubes. Set aside. Keep all the other ingredients ready.
    • Chop onions, green chilies and coriander leaves. Take juice from lemon and keep it ready. Wash and soak poha in water until its soft enough to mash. Squeeze the water completely from poha once it's soft.
    • Heat oil in a pan and add the items to temper one by one. Sauté until cumin seeds cracks.
    • Then add onions along with green chilies and sauté onions until it's transparent. Then add cubed sweet potatoes and toss it well. Add 2 tbsp of water and cook it covered for 5-7 minutes or until the sweet potatoes are soft. Make sure the sweet potatoes are soft enough to bite but not too mushy.
    • Then add soaked poha with sugar and required salt. Mix well.
    • Cook everything covered for two to three minutes and switch off the flame, add lemon juice & garnish with coriander leaves.

    #4. Spinach Banana Muffins

    Recipe Ingredients:

    • 1/2 cup unsweetened applesauce (one of the single serving cups)
    • 1 large egg
    • 2 teaspoons vanilla extract
    • 2 cups fresh organic spinach - uncooked (could also add shredded carrots, shredded zucchini, or shredded yellow squash (all raw) to really pack it full of veggies!)
    • 1 ripe banana
    • 1/3 cup Maple Syrup, Organic, Grade A
    • 2 tablespoons Organic Coconut Oil
    • 1.5 cups whole wheat flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt

    Method of Preparation:

    • Preheat oven to 350° F.
    • Put the first seven ingredients (applesauce, egg, vanilla, spinach, banana, maple syrup, and coconut oil) in a blender or food processor and blend.
    • Combine the dry ingredients (flour, baking powder, baking soda, and salt) in a smaller mixing bowl.
    • Add the wet spinach mixture from blender to the dry ingredients.
    • Slowly mix the dry ingredients into the wet until combined. You can use a spoon or spatula. The mixture might be dense. Add a splash of milk to loosen it up if you need to, but the mixture should resemble a thick pancake dough. It won’t pour easily, will need a spoon.
    • Scoop the batter into greased muffins tins.
    • Bake at 350 degrees (12 minutes for mini-muffins or 17 minutes for regular-sized muffins).
