Here are a few tried and tested recipes to make cookies right in your kitchen with minimal efforts. Dried Fruit And Nut Cookies

    Ingredients For Making Dried Fruit And Nut Cookies:

    • Mix of dry fruits (Cranberries, blueberries, black currants and glazed Cherries): 80 Gms
    • Mix Nuts (walnuts, Almonds, Cashews or Pecans) 80 gms
    • Orange juice or any jam: 2 tbsp
    • Jaggery syrup or honey: 1 – 2 tbsp
    • Lemon or Orange zest: 2 tsp
    • Caraway Seeds (whole) ¼ tsp or spice mix (equal quantities of cloves, cinnamon & nutmeg): ¼ tsp
    • Salt: ½ tsp
    • Unsalted Butter: 100 gms
    • Brown Sugar: 100 gms
    • Egg: 1
    • Whole Wheat Powder: 160 gms
    • Baking Powder: ½ tsp
    • Baking Soda: ½ tsp

    Method For Preparing Dried Fruit And Nuts Cookies:

    The whole process starts a day before. Mix all the dry fruits, nuts and orange juice in a bowl, cover it and keep it aside for at least 12 hours.

    • Sieve together flour, spice mix, salt, baking powder and baking soda in a mixing bowl
    • With the help of whisker, cream together softened butter and brown sugar for 2-3 mins
    • Add the egg and mix until incorporated. Add flour mix half at a time and fold together, add nuts and orange zest including the liquid in a bowl
    • Take a full size parchment or butter paper, place the mix in the lengthy edge of the paper
    • Roll half into a log 1 ½ inch thick making long roll. Refrigerate the dough for several hours or until firm
    • Preheat the oven to 180 degrees centigrade. With the sharp knife cut the logs into ½ inch thick slices
    • Place the slices on ungreased sheet pan and bake for 15 to 20 mins or until lightly golden
    • Remove and cool it on a wire rack
    • Store it in air tight container. Healthy dry fruits cookie is now ready to be enjoyed!

    Eggless Peanut Butter Cookies

    (Makes 16 cookies)

    Ingredients:

    • Peanut Butter: 1 cup any brand
    • Plain Flour: 1cup
    • Sugar powdered: ½ cup
    • Baking powder: ¼ tsp
    • baking Soda: ¼ tsp
    • Milk: 5 tbsp
    • Salt a pinch

    Method For Preparing Eggless Peanut Butter Cookies

    • In a mixing bowl, sift the flour, baking powder, baking soda and salt and keep aside
    • Cream the peanut butter for a few minutes with a mixer
    • To this, add the sugar, 2 tablespoons of milk and cream for a couple of minutes
    • Add flour mix half at a time and fold together till blended at low speed (if the mixture appears very thick, add a tbsp. of milk)
    • Take a full size parchment or butter paper, place the mix in the lengthy edge of the paper
    • Roll half into a log 1 ½ inch thick making long roll (or you can make different shapes with hands or with a cookie cutter and cover it with cling foil to store in fridge)
    • Refrigerate the dough for 20 minutes or until firm
    • Preheat the oven to 180 degrees centigrade. With the sharp knife, cut the logs into ½ inch thick slices
    • Place the slices on ungreased sheet pan and bake for 15 to 20 minutes or until lightly golden
    • Remove and cool it on a wire rack. Store it in an air tight container

    (Makes 14 cookies)

    Ingredients For Preparing Eggless Whole-wheat & Custard Powder Coconut Cookies:

    • Whole Wheat Flour: 1 Cup
    • Custard Powder: 3 tbsp
    • Oil: 1 cup
    • Desiccated Coconut: 3 tbsp
    • Vanilla Essence: ½ tbsp
    • Brown Sugar powdered: ½ cup
    • Baking powder: ¾ tsp
    • baking soda: ¼ tsp
    • Milk: 1 tbsp, salt a pinch

    Method For Preparing Eggless Whole-wheat & Custard Powder Coconut Cookies:

    • Sift together flour, baking powder, baking soda, custard powder and salt in a mixing bowl
    • To this add desiccated coconut and keep aside
    • Add powdered brown sugar, oil and vanilla essence and mix it with the whisker
    • Add flour mix half at a time and fold together until they are blended at low speed to this add a tbsp of milk and bind it properly
    • Cover the dough and let it rest for 5 minutes
    • Make small rounds and flatten them with a fork, place them on lined baking tray and bake for 12-15 minutes or when they crinkle and edges are done
    • They will remain soft initially but will become crisp in 10 minutes
