Healthy Carrot Recipes For Your Child

Carrots are extremely healthy not only for children but for adults as well. Loaded with antioxidants (beta-carotene), fiber, Vitamin C, Vitamin A, Vitamin K, Vitamin B8, Pantothenic acid, Potassium, folate, iron, copper and manganese it is considered to be one of the most nutritious veggies you can have in the pantry. But new mothers always face a problem of feeding their little one with vegetables and hence here are some interesting and healthy carrot recipes for your little one. Here are some amazing carrot recipes-

Cheesy Carrot Fries-

    Ingredients-

    • 2 Carrots, cut into strips
    • 1 Tbsp. olive oil
    • ½ tsp oregano
    • ¼ tsp black pepper
    • garlic, crushed
    • 1 Tbsp. Grated cheddar cheese
    • Rock salt ,a pinch

    Method

    1. Cut the carrots in thin strips and place aside
    2. Now add the carrot fries, sprinkle the oregano, black pepper, garlic and rock salt
    3. Toss it once and then add olive oil on top
    4. Mix well and cover it with a lid and let it soften for next 3-4 minutes
    5. Once done, sprinkle the grated cheese and serve

    Carrot Orange Pineapple Juice-

    Ingredients-

    • 3 Medium carrots, peeled and cleaned well
    • 1 Orange, peeled and segments separated, seeds removed
    • 3-4 pineapple slices
    • Few mint leaves

    Method-

    1. In a blender or mixer add all the ingredients together and blend till done completely
    2. You can add little water if you like
    3. Remove it in a tall glass and serve

    Sweet Carrot Dip-

    Ingredients-

    • 2 Medium carrots, peeled and chopped
    • 2 Cloves garlic, chopped
    • 2 Cups boiled chickpeas
    • 2 Tbsp. olive oil
    • Juice of 1 lemon
    • 1 Tbsp. honey
    • 1 /2 tsp oregano
    • ½ tsp black pepper
    • Rock salt
    • Water- 1/4th cup

    Method-

    1. In a blender or mixer add carrots and garlic and blend till mixed well
    2. Now add in the remaining ingredients and blend till smooth again, do not water at this point of time
    3. After everything is mixed well, add little water and blend till it reaches the desired consistency. It shall thicken once placed in the refrigerator since it contains chickpeas

    Carrot And Yogurt Soup-

    Ingredient-

    • 2 Tbsp. olive oil
    • 1 Small onion
    • 2 Carrots
    • ½ red bell pepper
    • 2 Cloves garlic, minced
    • 2 Cups of vegetable soup/chicken stock
    • 1/4th cup chickpeas/rajma, boiled
    • Rock salt to taste
    • ¼ th tsp black pepper
    • ½ tbsp. lemon juice
    • Few coriander leaves, chopped for garnish
    • Plain yogurt/Greek yogurt for garnish

    Method-

    1. In a vessel, heat olive oil add onions and cook till soft, this should take about 5 mins
    2. Once done add chopped carrots and garlic. Cook till the carrots are soft
    3. Now you can the stock, bell pepper, chickpeas/rajma lemon juice and salt. Mix well
    4. Cook this mixture till the carrots are cooked well and the beans have almost mashed
    5. Once done, let the soup mixture cool down for some while
    6. Once it has cooled down, add black pepper, and blend the mixture for about 1 min
    7. Refrigerate the soup for about an hour
    8. Now garnish with yogurt and coriander leaves
